Maple Syrup History
In 1998 we began making maple syrup like many other sugarmakers in our backyard. We placed nine buckets out for sap collection and made less than a gallon of syrup! That first year we were up well past midnight in order to finish a boil.
In 2001 we decided this hobby had become somewhat obsessive; we needed to upgrade to a better system. We purchased a 20”x 66” Waterloo Small wood fired evaporator, and tapped approximately 125 trees. This unit would evaporate anywhere between 20 and 25 gallons per hour. The production changed but the midnight boils continued.
In 2007 we had outgrown the woodshed and built a new sugarhouse and gift shop a dream finally realized after many years of planning; it was time to get serious!! The operation has now grown from a “hobby” to a serious maple sugaring operation. Production needed to increase and of course that meant a different evaporator.
In 2010 When you visit our sugarhouse today, you will see an oil fired, 2’ x 8’ custom made evaporator by W. F. Mason. The fluctuating spring weather of recent years has forced many sugar makers to invest in greater technology to expand their operations by introducing vacuum and reverse osmosis (RO) systems. The sap runs down our hillside into a collection tank which then automatically pumps the fresh sap directly into our sugarhouse. The added technology has given us the ability to tap more trees that were not easily accessible utilizing gravity feed. We currently are processing approximately 150 gallons of sap per hour; but stay tuned, I sense that more changes will be forthcoming in the near future. I can happily report that the midnight boils are no longer.
